Determining the starch content of the potatoes is very important for the production of crispy, golden-yellow chips. To do this, a certain amount (5kg) of potatoes is weighed into a special basket, then submerged under water and weighed again. Depending on the starch content, the buoyancy of the potatoes changes. The underwater weight can now be read off the scales. With this weight, the starch content can then be read from a table.
