Wild-harvested edible mushrooms are the exception today. Most mushrooms are professionally cultivated. Champignons make up the largest proportion of cultivated mushrooms grown in Germany, at almost 98 percent. The remaining two percent are noble mushrooms. In principle, all cultivated mushroom species would grow outdoors. However, they have a very narrow spectrum in which they feel comfortable and thrive. In order to be able to control the conditions optimally, cultivated edible mushrooms are therefore mainly grown under controlled conditions in special cultivation rooms. They are grown on so-called racks and carefully harvested by hand.
