During beer filtration, all yeast cells and turbidity that is not wanted in the finished beer must be filtered out. Since a filter is not able to filter out 100% of all the particles contained in the beer, breweries usually use filter aids. This includes diatomaceous earth, a powdery substance that consists mainly of the shells of fossilized diatoms. These ensure that the finest particles are bound and can be filtered out by the filter. In order for the filtration process to run according to the rules, a very specific amount must be added to the kettle. This amount is precisely weighed using industrial scales.
